Prep
Hull and slice 160g strawberries. Slice 1 small banana into about 72g total. Measure 52g chia seeds, 360ml lactose-free kefir, 0.75 tsp vanilla extract, 0.1 tsp sea salt, zest 1 lemon, and 20g hemp seeds. Have 2 airtight containers ready.
Build
In a medium bowl, whisk chia seeds, kefir, vanilla extract, lemon zest, and sea salt together over medium-low intensity until no clumps remain. Let rest 5 minutes, then whisk vigorously again to break up chia clusters. Cover and refrigerate at 4°C for at least 4 hours until thick and spoonable.
Finish
Divide chia pudding evenly between 2 airtight cups or jars at room temperature. Top each with 80g sliced strawberries, half the sliced banana, and 10g hemp seeds. Seal containers and refrigerate up to 4 days.
Plate
At serving time, stir fruit and hemp seeds through the pudding for an even spoonful and serve fresh from the refrigerator.
