Soak 104g pitted Medjool dates in warm water 10 minutes, drain well. Measure 88g raw cashews, 20g unsweetened raw cacao powder, 10g chia seeds, 0.5 tsp vanilla extract, pinch fine sea salt, and 8g extra cacao powder for rolling.

In a food processor over medium speed, pulse cashews 6–8 times until coarsely chopped with texture. Add soaked dates, cacao powder, chia seeds, vanilla, and sea salt; blend 1.5–2 minutes until a thick, sticky dough forms, scraping sides halfway.

Finish

Scoop dough into 6 equal portions of roughly 38g each. Roll between your palms into tight balls, pressing firmly so they hold shape. Coat each bite in extra cacao powder until lightly dusted. Refrigerate on a lined tray 30 minutes until firm.

Divide 6 bites into 2 airtight containers (3 bites per container). Refrigerate up to 5 days or freeze up to 60 days. Serve with fresh raspberries or sliced strawberries alongside.
