Prep
Mince 4 garlic cloves. Chop 20g flat-leaf parsley finely. Measure 1/2 cup + 2 tbsp extra virgin olive oil, 4 tbsp lemon juice, 2 tsp red wine vinegar, 1 tsp sea salt, 0.5 tsp black pepper, and 0.5 tsp dried oregano. Slice 200g cucumber. Have 80g Kalamata olives and 4 large pita breads ready.
Char
Pierce 2 large aubergines all over with a fork. Place directly over a gas flame or under a very hot oven grill at high heat. Char 25 to 30 minutes, turning every 5 minutes, until skin is completely blackened and flesh is completely soft and collapsed.
Rest
Transfer charred aubergines to a colander and cool 5 minutes. Peel away and discard all charred skin. Gently squeeze flesh to remove excess liquid.
Build
Chop aubergine flesh finely on a board, transfer to a bowl. Beat in minced garlic, 1/2 cup + 2 tbsp olive oil, lemon juice, and vinegar until combined but still textured. Stir in parsley and season with salt and pepper to taste.
Finish and plate
Transfer dip to a serving bowl, drizzle with 2 tbsp finishing olive oil, and dust with dried oregano. Serve with warm pita bread, Kalamata olives, and sliced cucumber on the side.
