Prep
Split both Cuban bread rolls and spread yellow mustard evenly on all cut sides. Layer ham, roasted pork, Swiss cheese, and pickle slices on bottom halves. Close sandwiches, press firmly together. Spread softened butter across outside top and bottom of each sandwich.

Sear
Heat heavy-based pan or cast iron skillet over medium heat. Place both sandwiches in pan, press down firmly with heavy pan or sandwich press. Cook 3–4 minutes until bottoms are golden and cheese begins to melt.

Crisp
Flip sandwiches carefully, press again, cook further 3 minutes over medium heat until second sides are golden and cheese is fully melted.

Plate
Remove from pan, slice diagonally, and serve immediately.
