Mushroom Swiss Burger (High-Protein)
A high-protein American burger built on a lean beef and egg white patty, seared and topped with sauteed mushrooms and melted Swiss on a whole wheat bun. Black beans stirred into the mix and lettuce and tomato add fibre. Served with dill pickle slices.

Instructions

Prep
In a bowl, combine the ground beef, egg white, mashed black beans, salt and pepper, then shape one firm patty.

Saute
Heat the olive oil in a skillet over medium-high heat and cook the sliced mushrooms 5 to 6 minutes until edges turn deep golden brown. Set aside.

Sear
Add the patty to the same skillet over medium-high heat and sear 4 minutes per side until a dark crust forms and the centre is firm.

Melt
Pile the mushrooms on the patty, lay the Swiss slice over the top, cover the skillet and cook over low heat 1 minute until molten.

Plate
Spread Dijon on the toasted whole wheat bun base, layer lettuce, tomato and pickle, set the cheese-topped patty on top and serve immediately.
