Shape the lean ground beef into a patty, season both sides with salt and black pepper, and press a shallow centre dimple.

Heat the olive oil in a skillet over medium heat and cook the sliced mushrooms and onion 6 to 7 minutes until golden and liquid cooks off.

Cook the patty on a hot grill over medium-high heat about 4 minutes per side until charred and the centre reaches 71C with no pink, flipping once.

Lay the Swiss slice on the patty during the last minute on the grill and cover loosely until the cheese softens and slumps over the edges.
