Prep
Cut the pork into chunks. Tear the dried chillies, toast in a dry pan 1 minute, then soak in hot water 10 minutes.
Sear
Brown the pork in oil over medium-high heat 6–7 minutes until coloured, then soften the onion and garlic 2–3 minutes.
Simmer
Blend the soaked chillies into a paste. Add it with the stock and oregano and simmer over low heat 30 minutes.
Finish
Stir in the drained hominy and simmer over low heat 10 minutes until the pork is tender and the broth is rich.
Plate
Ladle into bowls and top with shredded cabbage, thin radish slices, and a squeeze of lime.
