Instructions

Prep
Preheat the oven to 350°F (175°C) and line a small baking sheet with parchment paper.

Cream
In a mixing bowl, cream the softened butter with the brown sugar and white sugar until pale and fluffy.

Fold
Beat in the egg yolk and vanilla, then sprinkle flour, baking soda, cinnamon and salt over the bowl and fold in with a spatula until just combined, then fold in the rolled oats and raisins.

Chill
Cover the bowl and refrigerate the dough for 15 minutes so the cookies hold their shape.

Build
Drop the dough onto the lined baking sheet as 4 equal mounds, spaced 2 inches apart.

Bake
Bake at 350°F (175°C) for 11-12 minutes until the edges turn golden brown and the centres look just set but still soft.

Cool
Leave the cookies on the baking sheet for 5 minutes until firm enough to lift, then transfer to a wire rack to cool completely.

Keep the cooled cookies in an airtight container at room temperature for up to 4 days.
