Oklahoma Onion Burger
An Oklahoma-style smashed beef burger where thinly shaved onions are pressed directly into a ball of ground beef on a hot griddle, so the onions caramelize into the crust as the patty crisps. Topped with a slice of melted American cheese and served on a toasted bun with pickles and mustard.

Prep
Shave the onion paper-thin, pile loosely on a plate, then roll the beef into a loose ball and season with salt and pepper.

Toast
Toast the cut sides of the hamburger bun in a dry skillet over medium heat 1 minute until golden and lightly crisp.

Sear
Wipe the skillet, add oil over medium-high heat, lay a bed of onion, set beef on top and smash thin, cooking 3 minutes until edges are lacy brown.

Melt
Flip so the onion side faces up, lay the cheese on top and cook 2 minutes over medium-high until onions soften and cheese fully melts.

Plate
Spread mustard on the bottom bun, add pickles, slide the patty on, cap and serve immediately while crisp.
