Oklahoma Onion Burger (Gluten-Free)
A single beef smash burger where thinly shaved onion is pressed into the patty against a hot flat surface, steaming and caramelising into the meat. The lacy onion crust is topped with melted American cheese and stacked on a toasted gluten-free bun with mustard and dill pickles.

Prep
Shave the onion paper-thin on a mandoline, then loosely shape the ground beef into a rough ball without compacting the meat.

Toast
Melt the butter in a cast-iron skillet over medium heat and toast the cut sides of the gluten-free bun 1 to 2 minutes until golden.

Sear
Raise the skillet to high, pile the shaved onion, set the beef ball on top and smash flat hard for 2 minutes until the edges crust lacy brown.

Sear
Flip so the onion faces down, season with salt and pepper, lay the cheese on top and cook 2 to 3 minutes until onions char and cheese slumps.

Plate
Spread mustard on the bun base, lift the patty on, add the dill pickles, close with the top bun and let settle 1 minute.
