Bring a large pot with a steamer basket to a boil. Crush the garlic and halve the lemons ready for the butter.
2
Steam
Set both whole crabs in the basket (or steam in batches if necessary). Cover and steam over high heat 14–15 minutes until the shells are bright and the crabs are hot through.
3
Reduce
Melt the butter with garlic over low heat 3 minutes until fragrant, then squeeze in the lemon juice from 1 lemon.
4
Plate
Crack the crabs and arrange on plates. Serve with the garlic butter, dressed greens, lemon wedges, and sourdough.
