Slice the onion thinly and shape the ground beef into a thin oval patty roughly the footprint of the rye bread.

Saute
Cook the onion in the oil over medium-low heat 15 minutes, stirring now and then, until soft, deep golden brown, and jammy.

Season the patty with salt and black pepper and sear in the same skillet over medium-high heat 3 minutes per side until crusted.

Build
Butter one side of each rye slice, then stack Swiss cheese, patty, onions, and more cheese on unbuttered bread, buttered sides out. Griddle over medium heat 3 minutes per side until golden.

Cut the patty melt in half on the diagonal and serve hot.
