Philly Cheesesteak

Slice the ribeye as thinly as possible against the grain on a board, and slice the onion and green bell pepper thin.

Saute
Heat half the oil in a flat skillet over medium-high heat and cook the onion and pepper 5 minutes until softened and edges browned.

Sear
Push the vegetables aside, add remaining vegetable oil and the beef over high heat, cooking 3 minutes and chopping until no pink remains and edges brown.

Melt
Season with salt and pepper, mix the beef and vegetables together, lay the provolone over the pile off the heat, and rest 1 minute until glossy.

Plate
Split the hoagie roll open, scoop the beef and cheese mixture inside, set the sandwich seam-up on a board, and serve hot.
