Slice the beef sirloin thinly against the grain, cut the onion and green pepper into strips, and season the beef with salt and pepper.

Saute
Heat the olive oil in a large skillet over medium-high heat and cook the onion and pepper 4 to 5 minutes until softened and browning.

Sear
Push vegetables aside and add the beef in a single layer, searing over medium-high heat 3 to 4 minutes until it loses its pink colour and browns.

Warm
Stir in the black beans over medium heat 2 minutes until hot and combined with the seared beef and vegetables throughout.

Plate
Split the toasted whole-wheat sub roll, scoop the hot beef and black bean mixture into it, and serve immediately.
