Prep Pat the frozen pierogi dry on a paper towel. Slice the onion thinly and mince the chives.

Sweat Melt half the butter with the vegetable oil in a nonstick skillet over medium-low heat, add the onion and cook 20 minutes, stirring occasionally, until deep golden brown and jammy.

Sear Move caramelised onion to the skillet edge, add remaining butter to centre over medium heat, then add pierogi in a single layer and cook 3–4 minutes per side until blistered and golden brown.

Plate Fold caramelised onion through the pierogi, season with salt and pepper, transfer to a plate, top with sour cream, and scatter chives over the top.
