Pimento Cheese Burger

Prep Grate the cheddar and dice the pimento peppers, then mix with mayonnaise into a spreadable paste until the cheese is fully coated.

Prep Shape the ground beef into a single patty about 1cm thick and season both sides with the salt and black pepper.

Sear Cook the patty on a grill over medium-high heat 3 to 4 minutes per side until a browned crust forms and the centre reaches 71C.

Melt Spoon the pimento cheese onto the patty over medium-high heat during the last minute, cover, and let it soften and melt across the surface for one minute.

Plate Toast the brioche bun cut sides, layer lettuce, tomato and pickle on the bottom, set the patty on top, close the bun and serve.
