Cut russet potato into fry-shaped sticks, pat them dry with a towel to crisp rather than steam in oil.

Heat vegetable oil in a small pot over medium-high heat to 350°F and fry potato sticks for 6 to 8 minutes until golden and crisp outside.

Split the Italian roll, spread mayonnaise on the bottom half, layer capicola and provolone cheese, pile hot fries on top, add coleslaw and tomato slices, close roll.
