Prep Cut pork belly into a whole piece. Slice cucumber thinly; mix with rice vinegar, sugar, and salt, set aside 10 minutes. Cut spring onion into 5cm lengths and finely slice separately. Slice ginger. Combine flour, yeast, sugar, and baking powder in a bowl.

Blanch Place pork belly in a pot, cover with cold water, bring to a boil, cook 5 minutes. Drain, rinse, pat dry thoroughly.

Sear Heat a dry pan over medium-high heat. Sear pork skin-side down 4–5 minutes until golden. Sear remaining sides 2 minutes each. Transfer to a heavy pot.

Braise Add dashi, soy sauce, mirin, sake, rock sugar, spring onion lengths, and ginger to the pot. Bring to a simmer over medium heat, cover with a drop lid, braise over low heat 1.5 hours turning every 30 minutes, until pork is very tender and glaze thickens. Rest 20 minutes in liquid, then slice into 2cm pieces.

Build Mix warm water and oil into flour mixture, knead 8–10 minutes until smooth and elastic. Cover, prove 1 hour until doubled. Divide into 8 pieces, roll each into a 10cm oval, brush with oil, fold over a chopstick, slide out. Prove 20 minutes.

Steam Steam bao in batches over high heat 8–10 minutes until puffed and cooked through. While bao cooks, warm pork gently over low heat.

Plate Arrange warm bao on a serving board. Fill each with pork belly slices, pickled cucumber, finely sliced spring onion, kewpie mayo, and a drizzle of hoisin sauce. Serve immediately.

  • 1 tbsp hoisin sauce
