Pork roll egg and cheese
A New Jersey deli sandwich of pan-seared Taylor pork roll, a fried egg, and melted American cheese stacked on a toasted kaiser roll. The pork roll edges are slit and pan-fried until crispy, the egg is cooked until the white sets and yolk stays soft, and the cheese melts over both before assembly. Traditionally served for breakfast with optional ketchup.

Instructions
1
Prep
Slit the outer rim of each pork roll slice in two spots with a paring knife so they lie flat and split the kaiser roll in half.
2
Sear
Fry the pork roll slices in a dry skillet over medium heat 3 to 4 minutes per side until edges darken and centers show light browning.
3
Fry
Melt butter in the skillet over medium-low heat, crack the egg in, and fry 2 to 3 minutes until the white sets and yolk edge firms.
4
Melt
Lay cheese over the hot egg, cover the skillet, and let sit off heat 1 minute until the cheese turns glossy and droops.
5
Toast
Place the split kaiser roll cut-side down in the skillet over medium heat for 1 minute until golden brown grill marks form.
6
Plate
Stack pork roll slices, cheese-topped egg, salt, and pepper on the toasted roll base, close with the roll top, and serve immediately with ketchup on the side if desired.
