Pork Sausage Burger

Prep
Combine ground pork, dried sage, minced garlic, black pepper, and salt by hand until bound, then form one wide patty larger than the bun.

Saute
Heat 1 tsp olive oil in a skillet over medium heat and cook the sliced onion 8 minutes, stirring, until soft and deep golden with jammy edges.

Sear
Wipe the skillet, add the remaining oil over medium-high heat, and cook the patty 4 minutes per side until browned and the centre reaches 71C, then lay cheddar on top to melt.

Toast
Place the split brioche bun cut-side down in the skillet over medium heat 1 minute until the surface is golden and lightly crisp.

Plate
Spread mayonnaise and wholegrain mustard on the bun base, add lettuce, tomato, cheesy patty and onion, cap, press gently, and serve at once.
