Instructions

Blend a chermoula from cilantro, parsley, garlic, cumin, paprika, lemon, and 2 tbsp olive oil. Coat the lamb and season with salt.

Divide the lamb between two portions. Brown each in 1 tbsp olive oil over high heat 4–5 minutes until charred outside and pink within, then rest.

Soften the sliced onion in the same pan over medium heat 3–4 minutes until soft and lightly caramelized at the edges.

Lay raclette slices over the warm lamb and onion off the heat 2–3 minutes until the cheese melts and flows freely.

Toast the bread in the same pan over medium heat 1 minute per side until golden and evenly crisp throughout.
