Instructions

Heat ghee or oil in the pressure cooker and add the whole spices until fragrant.

Add sliced onions and sauté until golden brown.

Stir in ginger-garlic paste and cook until raw smell disappears.

Add mutton pieces and sear on high heat until lightly browned.

Mix in turmeric, red chili powder, coriander powder, and salt; cook for 2-3 minutes.

Add tomato puree and cook until oil separates from the masala.

Whisk in yogurt and cashew paste, stirring continuously to prevent curdling.

Add water, cover, and pressure cook for 4-5 whistles or until mutton is tender.

Let the pressure release naturally, then open and simmer briefly to adjust gravy consistency.
