Prep
Slice tomatoes into thin rounds, slice cucumbers into thin rounds, crumble feta into a bowl. Chop parsley and dill, halve lemon. Mix feta with parsley, dill, oregano, salt, and pepper until evenly combined.
Toast
Heat oven to 200°C. Slice both simits horizontally through centre with a serrated knife, lay all four halves cut-side up on a tray. Toast at 200°C for 4 minutes until edges crisp and sesame seeds turn deep golden.
Build
Remove from heat and let rest 2 minutes. Drizzle olive oil over all warm simit halves to soak in. Layer feta mixture across the bottom halves of both simits, top with tomato slices, cucumber slices, and olives.
Plate
Scatter pul biber over filling on both simits, finish each with a generous squeeze of lemon, top each with the second simit half, and serve with remaining lemon wedge.
