Loosely roll the beef into two balls without compacting, thinly slice the onion, and stir mayonnaise, ketchup, and mustard into a uniform sauce.

Melt the butter in a skillet over medium heat and toast the cut sides of the brioche bun 1 to 2 minutes until golden and crisp.

Add the oil to a heavy skillet over high heat and, once smoking, smash both beef balls flat for 2 minutes until a deep lacy crust forms.

Flip both patties, stack them, lay the American cheese on top and cook over high heat 1 minute more until the cheese slumps and the second side browns.
