Smash Burger (Keto)
A keto smash burger built on two thin beef patties smashed hard on a screaming skillet for lacy browned edges, melted American cheese, and a swipe of mayo-mustard sauce. Crisp lettuce leaves stand in for the bun, wrapped around tomato and onion for a bready, low-carb handheld.

Instructions
1
Prep
Divide the beef into two loose balls without compacting, and mix the mayonnaise and Dijon mustard in a small bowl until smooth.
2
Sear
Heat a cast-iron skillet over high heat 3 minutes, then place one beef ball down and smash flat hard to a thin disc; repeat with the second.
3
Sear
Season the tops with salt and pepper and cook undisturbed over high heat 2 minutes until the edges are lacy brown and the crust releases cleanly.
4
Melt
Flip both patties, stack them, lay the American cheese on top, and cook over medium-high heat 1 minute until the cheese slumps and browns.
5
Plate
Spread the mayo-mustard sauce across the lettuce leaves, add the onion and tomato, slide on the cheesy patties, and fold into a handheld wrap.
