Instructions
Prep
Pat 360g chicken thigh cubes dry. Toss with 1 tbsp olive oil, 2 grated garlic cloves, 1 tbsp lemon juice, both paprikas, cumin, oregano, onion powder, salt, pepper, and cayenne. Rest 10 minutes at room temperature for spices to bloom.
Roast
Preheat air fryer to 200°C (400°F) for 3 minutes. Arrange all cubes (approximately 12 pieces) in single layer with space between. Spray lightly with olive oil, air-fry 7–8 minutes, shaking basket halfway, until golden, charred at edges, and internal temp reaches 74°C (165°F).
Roast 2
Skip this step — all chicken fits in a single batch for this quantity.
Rest and plate
Cool all cubes fully on a rack. Divide cooled bites into 2 portions of 6 cubes each in airtight containers. Refrigerate up to 4 days or freeze up to 60 days. Serve with baby carrots, celery sticks, or sliced bell pepper for extra fibre and crunch.
