Bacon Cheddar Egg Bites

Prep
Cook turkey bacon until crisp, chop finely. Grate sharp cheddar. Finely chop fresh chives. In a blender, combine egg whites, whole egg, cottage cheese, 20g cheddar, salt, pepper, and garlic powder; blend 30 seconds until completely smooth.
Bake 1
Preheat oven to 150°C (300°F). Brush 4 holes of a muffin tin with olive oil. Boil a kettle of water. Divide chopped bacon and remaining 12g cheddar evenly between greased holes.
Bake 2
Pour egg mixture over fillings, filling each hole three-quarters full. Sprinkle with chives. Place tin in a roasting pan and pour boiling water halfway up tin sides. Bake 24–26 minutes until centres are just set with a gentle wobble.
Rest
Cool egg bites in tin 10 minutes. Run a knife around each bite and lift onto a rack. Cool fully before portioning into 2 airtight containers, 2 bites each. Refrigerate up to 4 days.
Plate
Remove 2 egg bites from container. Warm in microwave 40 seconds or oven at 160°C (320°F) for 6 minutes until heated through. Plate and serve with cherry tomatoes, cucumber slices, or yogurt dip.
