Prep

Finely chop 220g lean deli ham and 1.5 tbsp shallot. Finely grate 50g Gruyère. Finely chop 2.5 tbsp chives, 1.5 tbsp parsley, and 1 tbsp tarragon. Measure Greek yogurt, mayo, Dijon, salt, pepper, and nutmeg.

Build

Whisk Greek yogurt, mayo, Dijon, salt, pepper, and nutmeg in a small bowl until smooth. Add ham, Gruyère, chives, parsley, tarragon, and shallot. Smash together with a fork until evenly combined but still chunky. Taste and adjust seasoning.

Finish

Transfer smash to an airtight container or small glass tub. Refrigerate up to 3 days; flavour deepens as Gruyère softens into the mixture.

Plate

Toast 1 slice wholemeal sourdough per serving (or warm 1 wholemeal wrap). Scoop roughly 130g smash onto bread. Serve with cornichons, baby carrots, or sliced bell pepper for extra fibre and crunch.
