Instructions

Prep

Chop the bacon, onion, celery, pepper, and garlic. Drain and rinse the black-eyed peas. Rinse the rice ready to cook.

Sear

Brown the bacon in oil over medium-high heat 4–5 minutes until crisp, then soften the onion, celery, pepper, and garlic 4–5 minutes.

Simmer

Add the rice, stock, bay leaves, and peas. Cover and simmer over low heat 18 minutes until the rice is tender.

Finish

Rest off the heat 5 minutes, then fluff with a fork so the rice stays loose and the peas stay whole.
