Southern Fried Chicken
Southern Fried Chicken is bone-in chicken thighs and drumsticks soaked in buttermilk brine, dredged in seasoned flour with paprika, cayenne and garlic powder, then fried in hot oil until the crust shatters deep golden. The meat stays juicy from the brine and is served hot with lemon.

Instructions

Prep
Pat the chicken pieces dry and trim any loose skin on a board so the dredge grips cleanly.

Marinate
Submerge the chicken in buttermilk with brine salt, cover, and refrigerate 4 hours until tender.

Dredge
Whisk flour, paprika, cayenne, garlic powder, black pepper and dredge salt, then press each piece firmly into the flour until coated.

Fry
Heat oil in a deep pot to 175C and fry the chicken 14 to 18 minutes, turning once, until golden and juices run clear.

Plate
Drain the chicken on a rack, then pile on a plate and serve hot with a lemon wedge to squeeze over.
