Prep
Pat the pork chops dry and season with salt and pepper. Thinly slice the onions and crush the garlic.

Sear
Brown the chops in oil over medium-high heat 3 minutes a side until deeply coloured, then lift onto a plate.

Saute
Soften the onions and garlic in the pan over medium heat 6 minutes until golden, then stir in flour 1 minute.

Braise
Pour in the stock and add thyme. Return the chops and braise over low heat 25 minutes until tender and the gravy thickens.

Plate
Cook the rice separately until fluffy. Spoon onto plates, set a chop on top, and pour over the onion gravy.
