Southwest Black Bean and Sweet Potato Bowl
A vegetarian grain bowl built on roasted sweet potato cubes and cumin-spiced black beans over cilantro-lime brown rice. Charred corn, avocado and pickled onion pile on top, finished with a smoky chipotle-lime cashew crema. Bright, earthy Southwest flavours balance the sweet roasted vegetables and creamy dressing.

Prep
Peel and dice the sweet potato into 1cm cubes, drain the beans, slice the avocado and red onion, and chop the cilantro.

Roast
Toss the sweet potato with olive oil, cumin, smoked paprika and half the salt on a lined tray and roast at 425F for 22 minutes until caramelized.

Char
Dry-char the corn in a hot skillet over medium-high heat for 4 minutes, tossing, then add the black beans with a splash of water for 3 minutes until glossy.

Whisk
Stir the cashew butter, chipotle in adobo, a splash of water and half the lime juice together until the crema is streaked orange and pourable.

Plate
Spoon rice into a bowl, top with sweet potato, beans, corn, avocado and onion, drizzle the crema, scatter cilantro and finish with lime juice.
