Split Pea Soup with Ham (High-Protein)
Split pea soup built on ham and pork shoulder, simmered with onion, carrot and celery until the peas break down into a thick base. A large portion of lean ham and dried split peas push protein high while keeping the classic smoky flavour. Served with black pepper and parsley.

Prep
Rinse the split peas in a sieve and dice the ham, pork, onion, carrot and celery so everything sits ready by the stove.

Sear
Heat the olive oil in a heavy pot over medium-high and brown the diced pork shoulder 4 minutes until the edges catch colour and release.

Sweat
Lower to medium, add the onion, carrot and celery and cook 6 minutes until the onion turns translucent, then stir in the garlic for 1 minute.

Simmer
Add split peas, ham, bay leaf and stock, simmer over medium-low 60 minutes stirring occasionally until the peas collapse into a thick spoon-coating body.

Plate
Remove the bay leaf, season with black pepper, ladle into a warm bowl and scatter the chopped parsley over the top.
