Prep
Boil 1 inch of water in a pot with a steamer basket, then form the beef into a loose patty.

Steam
Set the patty in the basket, season with salt and pepper, cover, and steam over medium-high heat 8 minutes until juices run clear.

Melt
Lay the cheddar over the patty, re-cover, and steam over medium heat 3 minutes until the cheese slumps and pools around the beef.

Build
Spread the mustard on the cut kaiser roll, lift the patty and cheese onto the base, then add onion and tomato.

Plate
Close the roll and cut in half to serve while the cheese is still molten.
