Prep
Slice beef sirloin thinly against the grain, mince garlic, julienne carrot, slice onion and mushroom thinly, and chop scallion.

Marinate
Toss sliced beef with 1 tsp soy sauce and 1/2 tsp sesame oil, let sit 10 minutes at room temperature.

Boil
Cook glass noodles in boiling water over high heat for 6–7 minutes until translucent and tender, then drain and rinse cold.

Sear
Heat 1/2 tsp vegetable oil in a nonstick skillet over high heat, sear beef 2–3 minutes until browned outside and cooked through.

Toss
Add vegetables, noodles, spinach, minced garlic, 1 tbsp soy sauce, and brown sugar; toss over medium heat 2 minutes until glossy.

Finish
Drizzle with 1/2 tsp sesame oil, scatter scallion, sesame seeds, and black pepper on top, toss once to combine.
