Instructions

Heat a little oil in a pan and sauté chopped garlic, onion, and dried red chilies until soft and lightly browned.

Add chopped tomatoes and cook down until they turn soft, pulpy, and the raw smell disappears.

Add turmeric, salt, and tamarind (if using), and cook for a few more minutes.

Let the mixture cool slightly, then blend to a coarse or smooth chutney consistency.

In a small pan, heat oil for tempering; add mustard seeds, urad dal, chana dal, and let them splutter.

Add curry leaves and a pinch of asafoetida to the tempering, then pour over the blended chutney.

Mix well and serve the tomato chutney warm or at room temperature alongside dosa, idli, or rice.

- 1/4 tsp1/4 tsp turmeric powder
- 11 small piece tamarind
- 1/2 tsp1/2 tsp salt
