Prep
Toss sliced cucumber with rice vinegar, sugar, and salt; rest 10 minutes. Combine soy sauce, mirin, sake, sugar, grated garlic, and ginger in a bowl; stir until sugar dissolves. Have beef slices, spring onion, sesame seeds, and steamed rice ready.
Sear
Heat oil in a large frying pan over high heat until smoking. Add beef slices in a single layer, searing 1 minute without moving until browned underneath. Flip and sear 30 seconds until cooked through.
Glaze
Pour teriyaki sauce over beef and toss constantly over high heat 1–2 minutes until sauce reduces to a thick, glossy glaze and beef is fully coated.
Plate
Spoon steamed rice into bowls, top with glazed beef, pickled cucumber, and spring onion. Sprinkle with toasted sesame seeds and serve immediately.
