Instructions

Prep
Cut potatoes into thick fries and season with salt. Dice the onion, mince garlic, and slice merguez into rounds.

Fry
Heat oil in a large pan over medium-high heat. Fry potatoes 8 minutes until deep golden and crisp, then drain and set aside.

Sear
In the same pan over medium heat, brown merguez rounds 5 minutes until crisp and cooked through. Remove and set aside.

Simmer
Add onion and garlic to the pan over medium heat, cooking 2 minutes until softened. Stir in harissa, tomato paste, and cumin. Add beef stock and simmer 6 minutes until gravy thickens.

Plate
Pile fries into a bowl, scatter cheese curds and merguez over top, pour hot gravy across, and finish with fresh cilantro.

- 88 garlic cloves
- 2 tbsp2 tbsp harissa paste
- 4 tbsp4 tbsp tomato paste
- 400ml3/4 cup beef stock
- 2 tsp2 tsp ground cumin
- 3 tsp3 tsp kosher salt
- 16gsmall handful cilantro
- 4 tbsp4 tbsp neutral oil
