Instructions

Prep
Mix the arepa dough from masarepa, warm water, and salt. Blend the aji from tomato, scallion, chili, and cilantro. Juice the lime.

Sweat
Caramelize the onion in butter over medium heat for 6 minutes until soft, golden, and deeply sweet.

Fry
Deep-fry the shaped arepa in hot oil over medium-high heat for 4 minutes until puffed, golden, and crisp all over.

Build
Lay the raclette slices over the hot arepa off the heat for 2 minutes until the cheese begins to soften.

Crisp
Melt the raclette over low heat for 2 minutes until it bubbles and turns deep golden brown at the edges.

Plate
Top the arepa with caramelized onion, spoon the aji over, scatter cilantro across, and finish with a squeeze of lime.
