Prep
Press tofu between kitchen towels with weight for 15 minutes to remove moisture. Cut into 3cm thick rectangular slabs. Whisk white miso, red miso, mirin, sake, and sugar in a small saucepan until combined.

Glaze
Heat miso mixture over low heat for 2–3 minutes, stirring occasionally, until smooth and glossy. Remove from heat.

Grill
Thread tofu onto skewers or arrange on foil-lined grill tray. Brush generously with miso glaze on one side. Grill on high heat for 5–6 minutes until glaze caramelises and edges char lightly. Flip, apply glaze to second side, grill 4–5 minutes until golden.

Steam
While tofu grills, blanch spinach in boiling water for 1 minute until just wilted. Drain and squeeze out excess water. Toss with sesame oil, tamari, and 0.5 tbsp sesame seeds.

Plate
Arrange tofu skewers over steamed Japanese short-grain rice. Place sesame spinach alongside. Sprinkle tofu with remaining 1 tbsp sesame seeds and serve immediately.
