Turkey Bacon Ranch Burger

Prep
In a bowl combine the ground turkey, breadcrumbs, beaten egg, salt and pepper, then form one patty slightly wider than the bun.

Fry
Lay the bacon in a cold skillet over medium heat 6 minutes, turning once, until fat renders and strips are deep brown and crisp.

Grill
Brush the patty with olive oil and grill over medium-high heat 4 to 5 minutes per side until charred and the centre reaches 74C.

Melt
Lay the cheddar on the patty and toast the split brioche cut-side down over medium heat 1 minute until the cheese slumps and the bun is golden.

Plate
Spread ranch on both bun halves, stack lettuce, tomato, cheese-topped patty and bacon, then close the bun and serve while melted.
