Turkey Burger

Prep
Combine ground turkey, grated onion, minced garlic, Dijon mustard, Worcestershire, salt and pepper, then mix gently and shape into one patty slightly wider than the bun.

Sear
Heat the olive oil in a skillet over medium-high and cook the patty 5 to 6 minutes on the first side until a deep brown crust forms.

Melt
Flip the patty, lay the cheddar on top and cook another 5 to 6 minutes over medium until the cheese melts and the centre reaches 74C.

Toast
Wipe the skillet, place the split brioche bun cut-side down over medium heat 1 minute until the surface is golden and warm throughout.

Plate
Spread mayonnaise on the bun base, stack lettuce, the cheese-topped patty, tomato and red onion, then cap with the top bun and serve.
