Prep Mash the black beans, then combine with the ground turkey, egg white, smoked paprika, salt, and pepper and form one thick patty.

Sear Heat the olive oil in a nonstick skillet over medium-high and cook the patty 5 to 6 minutes per side until the center reaches 165F.

Sauce Whisk the Greek yogurt with the Dijon mustard in a small bowl until smooth and the sauce is fully combined.

Toast Warm the cut sides of the wholemeal bun in the hot skillet for 1 minute until golden, then spread with the sauce.

Plate Thinly slice the red onion, then layer lettuce, the patty, tomato slices, and onion on the bun base and cap.
