Vada Pav is a Mumbai street burger of spiced mashed potato bound with turmeric, ginger, garlic and green chili, coated in chickpea flour batter and deep-fried into a golden vada. Tucked into a soft pav bun with dry garlic chutney, tamarind and a fried green chili.

Instructions

Prep Mash the boiled potato, then finely chop the green chili and mince the garlic, mixing both through with salt for the filling.

Heat oil over medium and splutter the mustard seed and curry leaves for 40 seconds, then fold ground turmeric into the potato until fragrant and evenly yellow.

Whisk the chickpea gram flour with water and chili powder into a thick batter, shape potato into a ball, and coat it fully in batter.

Deep-fry the coated vada in medium-hot oil for 4 minutes until the batter turns crisp and deep golden brown, then drain well.

Plate Split the pav bun, spread tamarind paste inside, tuck in the fried vada and the whole fried green chili, then serve.

  • 11 green chili, plus 1 whole for frying
  • 1/2 tsp1/2 tsp mustard seed
  • 1/2 tsp1/2 tsp ground turmeric
  • 55 fresh curry leaves
  • 1 tbsp15ml tamarind paste
  • 1.5 tbsp22g chili powder
  • 1/2 cup120ml vegetable oil for frying
  • 1/2 tsp1/2 tsp salt
