Instructions

Syrup
stir the sugar into the water until it dissolves.

Flavour
add the lime juice, chopped mint and a little green colouring until it looks like potion.

Freeze
pour into a shallow dish and freeze 1 hour, until ice forms at the edges.

Scrape
rake with a fork every 30 minutes for 3 hours, until it is all fluffy crystals.

Serve
pile into small glasses straight from the freezer.
